Simon is a jerk, just like Connor. Unlike Connor, Simon is responsible and not nearly as reckless.

Simon has a cooler head than Connor, and he has a sort of a cool, detached personality. He is capable of easily no-selling or ignoring any threat or insult against him, even when he's being physically accosted (similar to Tony Gamble continuing to taunt Wade Elliot even despite Wade having him in a chokehold). This is actually part of his abilities as an actor, he can work himself into a sort of a "blank slate" and react calmly to events even when he might be in turmoil on both the inside and the outside. He can suddenly act different at a moment's notice, though it's often hard, if not impossible, to know if he's acting or he's really feeling that way.

As a result of all of this, Simon is very hard to really rattle, and it's also hard to see what he's thinking. He'd be pretty good at poker, actually. Simon MAY get frustrated during matches and yell at the referee, but he never really loses his cool like the emotional and hot-tempered Connor would.

There are two things, however, that Simon has a hard time tolerating.

The first is a strike to the face. Simon, because he's a (aspiring) movie star with good looks, values his looks. A blow to the face will ensure that Simon will bail, and if enough facial strikes occur, he may try to walk out on the match. Despite this, Simon himself is willing to bleed for his craft, although he will certainly whine about it AFTER the match is over.

The second is Miranda getting hurt. Like Connor, Simon really does care about her (and, in fact, has a one-sided crush on her). This is the best way to really pierce Simon's emotions and figure out what he's really thinking, although don't be surprised if he obliterates you with the Providence Knee Kick and maybe a piledriver or three directly afterwards.
